This is a simple, inexpensive, fast, and DELICIOUS win for the dinner table. I love that!
It’s a great side to an Italian dinner (like homemade lasagna, yum), wonderful for picnics and potlucks as a cold pasta salad (just add about 4 cups cooked and cooled garden rotini), or great all by itself (I guzzled up all the leftovers for lunch today).
Ingredients:
2 cans quartered artichoke hearts
2 pints cherry grape tomatoes
5 mozzarella “string cheese” sticks
1 cup Italian dressing
1 cucumber
Additional add-ins: black olives, sliced mushrooms, garden rotini
Directions: Drain the artichoke hearts, wash the cherry grape tomatoes, cut p the mozzarella sticks, peel and cut up the cucumber. Throw it all in a bowl with the Italian dressing and toss. Done! Serves 4 (or more if used as a side).
