Recipe: Instant Delicious Sausage Breakfast Casserole

Okay, so you know I’m big on at least trying to get my kids to have a good breakfast before they’re out the door for school. A couple of years back, I discovered you can microwave scrambled eggs (who knew?!), so last year, I thought I’d kick that notion up a notch, and I came up with this easy, instant breakfast casserole. It is SO simple and SO delicious and SO quick: perfect for school mornings!

You will need the following:

2 eggs

1/4 cup milk

3/4 cup (cooked) sausage crumble

1/4 cup shredded cheddar cheese

1 slice bread, torn up

*I use wheat bread, skim milk, and Jimmy Dean precooked turkey sausage

In a bowl (optionally sprayed with a bit of Pam so clean up’s easier), lightly beat the eggs, then add other ingredients. Stir to combine. Cover with a paper towel and microwave on high for 3 minutes. Stir again and microwave for another 30 seconds (or full minute, if needed). And that’s it! One hearty breakfast, ready for consumption! Hooray! his recipe makes about 1-1/2 cups of casserole goodness, plenty for one or two kiddos.

Umm… Well the kids are already in bed… And I forgot to take a photo of Big Bro eating this morning… He absolutely loves this quick and easy recipe… Here he is enjoying chocolate chip pancakes last weekend… But look what he was really dreaming about. 😉  Aw, that’s so sweet.
