Easy Spicy Chicken Soup {my hubs’ fave meal}

We are smack dab in the middle of a snowless snow day. [A little dreary outside, but I’m loving having all my people home.] Although there’s no frost on the ground, it’s still chi-lly, a perfect hot soup sort of day, non?!

Here’s a super simple, absolutely yumtastic hearty soup you can whip up in no time flat and with almost zero effort. [Can I just say I love recipes like this? Sure fire winners without a lot of prep or cook time: YES!]

Wanna whip up a big ol’ vat of it with me? Here we go:

First, cut the chicken breasts into bite size pieces and cook them (I defrost the chicken breasts in the microwave for a few minutes, then cook them in the soup pot on the stove before adding the other ingredients. While those are cooking, I microwave a couple of cups of instant rice to add in later.

Once the chicken is cooked, stir in the other ingredients (tomato soup, rotel, diced tomatoes, chili powder, lemon pepper, and water), and cook on medium high heat until it’s hot. Then, add in the cooked rice (optional).

And you’re DONE. Shazzam.

Mercy, it’s good. This recipe easily makes six or more hearty helpings. And if you prefer it thinned out a bit–more soupy–just add a little water at a time until you reach the desired thickness. And if you like things a little more caliente, you can use hot rotel and more chili powder, yowza!

It’s really delicious with a little shredded mozerella on top, like Big bro likes it here (hey wait! he ate it!!).

Or maybe with crackers on the side like my husband loves it (hey! guys! I’m trying to blog a recipe here, people!).
